○ Heat 1 tablespoon of the oil in the soup maker using the sauté function. Add the onion and sauté for 5 minutes until softened, stirring frequently with a wooden spatula.

○ Add the chickpeas, squash and curry powder and stir well to coat the vegetables with the spice. Stir in the stock and creamed coconut, then cook on the Smooth setting.

○ Season to taste and serve in warm bowls.

GARLICKY AUBERGINE AND SPINACH

SERVES 4

2 tablespoons olive oil

1 onion, diced

1 aubergine, diced

200 g (7 oz) potato, peeled and diced

2 garlic cloves, finely chopped

1 teaspoon ground cumin

1 teaspoon ground coriander

100 g (3½ oz) canned green lentils, drained

juice of 1 lemon

1 litre (1¾ pints) vegetable stock

125 g (4 oz) young spinach leaves, larger leaves torn into pieces

salt and pepper

crusty bread, to serve (optional)
